Regional Characteristics:

lt is a popular winter dish all over the country. In summer eggplant, summer squash, green beans, okra, green peppers, tomatoes and garlic are substituted for winter vegetables. It is always served with rice or bulgur pilaf. Sometimes cheese börek or cheese macaroni is served instead of pilaf. Cacık makes a good combination.
