Carrot Pilaf

TURKISH VEGETARIAN COOKING

PILAV

CARROT PILAV (Havuçlu Pilav)

1 cup rice
1 1/2 cups boiling water
1/2 cup finely grated carrots
1 medium onion finely chopped
2 tablespoons butter or margarine
1 teaspoon salt
2 teaspoons paprika (optional)

Melt butter and cook onions and carrots together until onions are transparanet then add salt and water and cover. Cook over medium heat for 10 minutes and over very low heat for another 10 minutes. Turn off heat and place a two-fold paper towel between lid and pot and let it rest for 15 minutes before serving. Always gently mix rice with a fork before spooning it into the serving dish.

(Corn oil might be substituted for butter or margarine)
