Tomato Pilaf

TURKISH VEGETARIAN COOKING

PILAV

TOMATO PILAV (Domatesli Pilav)

1 cup rice
3 ripe tomatoes
2 level tablespoons butter
salt and pepper to taste
1 1/2 cups boiling water

Melt butter in a pot; peel and cut tomatoes into very small pieces and cook in the melted butter over medium heat until tomatoes are well cooked. Add 1 1/2 cup boilling water and the rice to tomato mixture. Add salt and pepper. Cover and cook over medium heat for 10 minutes and very low heat for another 10 minutes. Then place a two folded paper towel between pot and lid and let it rest for 15 minutes before serving.
