TURKISH PASTRIES (Börekler)

WATER BOREK (Su Böreği)

Dough: 3 cups flour
4 eggs
1 teaspoon salt
1 teaspoon olive oil
1/2 cup water
1 cup melted butter

Filling: 1 1b soft white cheese
2 eggs
I cup chopped parsley

10 cups of water, I teaspoon salt to be boiled in a large deep pot. Using a large bowl make well with 3 cups of flour and break all the eggs and the salt, oil and 1/2 cup of water. Stir well and knead it to a silky ball. Let the dough rest for 10 minutes cooling with a dish towel. Crumble I 1b soft white (feta) cheese and add finely chopped parsley. Mix well after breaking in the two eggs, set it aside. Make 10 golf - ball sized balls of the dough and cover them with a dish towel. Roll out each ball to a nine inch diameter on a lightly floured board and spread it on the counter covering it with a towel. Wehn 5 balls a rolled out and spread put 15 cups of water, add the salt and teaspoon of oil and bring to boil. When all 10 balls are rolled out start dropping the rolled dough in the boiling water. Allow it to cook for about 40 seconds then lift it with a wide spatula and drop it in a plastic sieve. Then dry the dough with the dish towel and spread it in a well oiled 13x9 inch pyrex dish. You might tear it in the process but never put the next dough unless you have brushed it with melted butter. When 5 pieces are cooked in water slightly and spread in the pan brushing each layer with butter, spread the filling evenly and continue the same process with the remaining rolled out pieces of dough. Use the rest of the melted butter to brush the top generously. Bake in 350° oven for one hour until the top is golden. Take out of the oven and cut it into desired size squares and serve piping hot.
