VEGETABLE STEWS (Sebze Yemekleri)

Turkish vegetables are supposed to be "well" cooked which means both that they are quite soft when ready to serve. It is said that only bad cooks do not properly cook their vegetables and properly means "nice and soft". Whereas the way it is cooked Turkish style individual okra would be in its perfect shape unbroken and yet quite soft. What is more, because of the way okra is prepared initially, the top not cut off but peeled in such a way that it still has a conic shaped top safeguards the mushiness. The juice of one whole lemon or more is another reason for its taste as well as its apperance.
