ARTICHOKE SUPREME (Saray Usulü Enginar)

6 artichoke hearts (all leaves and the fuzzy inside is removed and only the flat bottom is left)
2 potatoes (cut into very small pieces)
1/2 1 b fresh or frozen peas
1 cup carrots (cut into very small pieces)
1/2 cup onions (finely chopped)
1 tsp. salt
1 teaspoon granulated sugar
1/2 cup olive oil
1 cup water
1 tsp. dill weed

Mix everything together and spoon the mixture on each artichoke heart. Place these into a shallow pan and add the water and oil evenly on all the artichokes heaped with the diced vegetables. Simmer over medium heat until everything is well done. Place them on a fat dish an and garnish it with fresh dill springs.

Serve at room temperature.
