MIXED VEGETABLE STEW (Türlü)

1/2 1 b. green beans
1/2 1b. zucchini
3 medium onions
3 medium tomatoes
2 small potatoes
1 small eggplant
1/2 1b. okra
4 cloves garlic
1/2 cup chopped parsley
1/2 cup chopped fresh dill or 2 tsps dried dill
1/2 cup chopped spearmint or 2 tsps dried spearmint
2 tsps lemon juice
1 1/2 tsp salt
2 tsps granulated sugar
1 cup water
1/2 cup olive oil or corn oil
1 bell pepper

Cut beans in half, peel and cut zucchini into quarters and then half, Cut onions north and south pole, cut tomatoes into six wedges, cut potatoes into small wedges peel egg-plant zebra-like and cut into half, then quarters, peel the cone of the okra and leave them whole (small okras are essential), Cut the pepper into rings.

Put all the vegetables and ingredients in a pot and cook until they are all tender not mushy. Serve at room temperature.
