CABBAGE ROLLS (Lahana Dolması)

1 medium-sized cabbage. Select a loose-leafed one.
All other ingredients are the same and are prepared in the same way as for the stuffed peppers.

Place cabbage, stem side down in a pot full of salted boiling water. Boil for five minutes. Drain and separate the leaves one by one. Cut out the harder stem parts. The leaves should be the size of your palm. Place a heaped serving spoon of the filling on each leaf. Turn two opposite sides in and roll like a fat cigar. The length should be about 3-4 inches. Place rolls side by side and in layers in the pot and simmer. Remove from pot when cooled and use your hand to do this because they must not be broken. Garnish with slices of lemon or bring four or five wedges of lemon to the table as some people like to squeeze lemon juice on top of dolmas before they eat it.
