STUFFED TOMATOES (Domates Dolması)

6 large, firm tomatoes
All ingredients as before, except chopped tomatoes.

Cut the tops off the undersides of each tomato. They are used as a lid after the tomato is stuffed. Scoop out the meat of the tomatoes with a teaspoon and use this later to make spiced cold tomato juice or rice and tomato soup (recipe to follow under soups). Stuff the tomatoes well but not to bursting point and cover tops with its own lid and simmer for twenty minutes on low fire or until the rice is soft. Let it cool and serve at room temperature.
